Elizabeth Stein never realized the success she’d envisioned in her career as a nutrition and lifestyle coach. But…there have been some consolations.
As a student at the Institute for Integrative Nutrition in New York, Elizabeth hoped to share the knowledge she was gaining with future coaching clients. In order to drum up that business, she secured a booth at the Westchester Triathlon Expo. Elizabeth, understanding the power of sampling, baked up some amazing gluten-free blueberry muffins to draw people to her display. She did not fully appreciate just how amazing the muffins were until they disappeared, and people were clamoring for their next hit.
At the following year’s expo, Elizabeth made mixes, which promptly sold out. A little light was going off in her head. Perhaps there was a different future for her, one related to the food she was putting together with incredibly healthful ingredients. Daily Candy turned that light into a blaze with a feature in its newsletter. Ten thousand dollars of orders flooded in. A new direction unfolded.
Elizabeth established Purely Elizabeth, rolling out more products like granola, oatmeal, and bars. She’s moved operations from New York and set up camp in the healthy lifestyles mecca of Boulder, CO. Purely Elizabeth holds the distinction of being a B Certified Corporation, following practices that promote a balance of profits and purpose.
So maybe she doesn’t have coaching clients. Instead, she has a thriving business creating and selling high-quality, healthful, and delicious foods via the Purely Elizabeth brand.
